KITCHEN FUNDAMENTALS

Love to cook but get frustrated in the kitchen?  A lack of the basics can make cooking intimidating which leads to not exploring the possibilities in your kitchen.
This 4 day course gives you a foundation of culinary skills to make your kitchen more approachable, and get you exploring your culinary possibilities.

WINTER WONDERS - SOUP

Soup is like a warm hug on a cold Calgary day.

In this class students will be learning the basics of soup cookery by making three types of soup from scratch.

We will be cooking broth based soups, vegetable puree soups and chowder or creamy soups.  Each student will leave with one liter of each soup, recipes including variations, knowledge on proper seasoning as well as finishing and garnishing techniques.

TURKEY WORKSHOP

Cooking turkey for the holidays can be a stressful affair.  It takes hours to prepare and hours to cook, only to result in overcooked white meat, more time in the kitchen carving the turkey and readying dinner, less time with family and loved ones, and underused bones that could have made an incredible gravy and soup the next day.
In this 2.5 hour workshop, learn how to deconstruct, brine, and bake your turkey to perfection.

SAUCE COOKERY

The 5 mother sauces are a fundamental of classic kitchen knowledge.  When learned, they can be altered and tweaked to elevate any meal.
In this class students will make three of the mother sauces, learning their nuances and variations.
All mother sauces will be covered, as well as some modern sauce styles.
